Corn and Avocado Salad with Lime Honey Vinaigrette

• Produce

  • 1 Avocado, slightly firm and cut into cubes
  • 1 Lime
  • 1 Poblano pepper
  • 1 Red bell pepper
  • 1/2 cup Red onion

• Condiments

  • 3 tbsp Honey
  • 1 Lime honey vinaigrette

• Baking & Spices

  • 1/3 tsp Pepper
  • 1/2 tsp Salt

• Oils & Vinegars

  • 1/4 cup Apple cider vinegar
  • 3/4 cup Olive oil, light

  • 1 Salad

• Other

  • 4 ears Of fresh corn - shucked and kernels removed from cobb

Directions

• In large bowl, add all salad ingredients.
• In small separate bowl, whisk all vinaigrette ingredients.
• Taste for seasoning - salt? pepper? Maybe an added tablespoon of honey or sugar?
• Pour dressing over corn salad - chill!
