Cosmopolitan Sorbet

Ingredients

• ½ cup sugar
• ⅔ cup water
• 12 ounces fresh cranberries
• 3 tablespoons vodka
• ½ cup fresh lime juice
• ½ cup sugar
• ⅔ cup water
• 12 ounces fresh cranberries
• 3 tablespoons vodka
• ½ cup fresh lime juice

Directions

• In a medium pot, heat the sugar, water and cranberries. Bring to a boil and then cover the pot and simmer on lowest heat for 15 minutes until the cranberries are completely soft.
• Remove from the heat and cool to room temperature. Once the Cranberries have cooled, puree the mixture on high and sieve through a fine mesh strainer.
• Whisk the liquid with the vodka and the lime juice and chill in the refrigerator.
• Freeze the sorbet in your ice cream maker according to manufacturers directions.
• Transfer to a freezer friendly container and freeze for at least 4 hours. Scoop and serve.
