One of the reasons I love the internet is to find recipes like this one. I had some extra cottage cheese in the refrigerator and wanted to see what else I could make with it and found this recipe on Daisy Brands website. Wow, they are delicious and we had them for dinner one night served with eggs and sausage. (We love having breakfast for dinner sometimes.) I also love the green onions inside the muffin too. Hope you enjoy. (If you havent seen yet, I love taking pics of my food that I make. Not sure what I like better? Cooking or the photographing of the finished product. Ingredients

  • 1 1/2 c all purpose flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 3/4 c daisy brand cottage cheese
  • 2 eggs, lightly beaten
  • 1/3 c vegetable oil
  • 1/4 c milk
  • 1/2 c ham, finely chopped
  • 1/2 c cheddar cheese, shredded
  • 1/4 c green onions, sliced

Directions

  • 1Mix the flour, baking powder and salt in large bowl and set aside. Mix the cottage cheese, eggs, oil and milk in another large bowl. Fold the ham, Cheddar cheese and green onions into the cottage cheese mixture. Stir the wet mixture into the dry ingredients until moistened. 2Spray 12 nonstick muffin cups very well with nonstick spray. Fill each muffin cup 2/3 full with batter. Bake in a preheated 375F oven 20 to 25 minutes or until the muffins are golden brown on top and toothpick inserted in center comes out clean. 3*Muffins can be made ahead and reheated. Weight Watcher value: 4 pts
