  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons xanthum gum
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon kosher salt
  • 1 ½ cups applesauce
  • ½ cup vegetable oil or melted coconut oil
  • ½ cup coconut milk (I use unsweetened in a refrigerated carton)
  • ⅔ cup fresh or frozen cranberries
  • 2 ½ cups gluten free all-purpose flour (I use bobs red mill)
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons xanthum gum
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon kosher salt
  • 1 ½ cups applesauce
  • ½ cup vegetable oil or melted coconut oil

Directions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray or brush with coconut oil
  • In the bowl of a standing mixer, combine all of the dry ingredients.
  • Add the applesauce, oil and coconut milk and whisk until well combined. Gently fold in the cranberries and transfer the batter to the prepared loaf pan, spreading it evenly into the pan.
  • Bake the loaf for 60 minutes at 350 degrees. Remove the loaf from the oven and then let cool before sprinkling with powdered sugar. Slice and serve. Store in an airtight container or Ziploc at room temperature.
