Crock Pot Bacon Cheese Ranch Potatoes

Ingredients

• 3 pounds red potatoes, quartered
• 6 slices of bacon, cooked
• 2 cups cheddar cheese, grated
• ½ cup onion, diced fine
• 2 tablespoon dry ranch dressing mix, (+ more to taste)
• 2 tablespoons chives, diced fine

Directions

• Line a crock pot with tinfoil, leaving a little overhang to wrap the potatoes on top, and spray with nonstick spray.
• In a glass bowl mix the potatoes with the dry ranch dressing mix and the diced onions.
• Start to layer the potatoes into the crock pot. Place a layer of the potatoes into the bottom of the crock pot. Top the potatoes with cheese and crumbled bacon. Add two more layers of the potatoes with bacon crumbles and grated cheese, reserving ½ cup of the cheese.
• Cover potatoes with the tinfoil overhang. Cover with the lid and cook on low heat for 7-8 hours or high heat for 3-4 hours. Sprinkle with the remaining ½ cup cheese. and cook until melted, about 2 minutes
• Serve immediately and garnish with the chives.
