Cucumber Tuna Bites

Ingredients

• ¾ English cucumber
• 6 oz. can of tuna, drained
• 1 Tbsp mayonnaise (can be replaced with 1.5 tablespoons olive oil)
• 3-4 Tbsp cheddar cheese
• 2-3 Tbsp chopped green onion (optional)
• ¼ avocado, cut into chunks
• Salt & Pepper to taste

Directions

• In a bowl combine drained tuna, mayonnaise, cheddar cheese, green onion (if using), salt & pepper. Stir until everything is well combined.
• Cut cucumbers into ⅔ of an inch to 1 inch pieces. Using a Melon Baller or a teaspoon, cut out an indentation about /14 inch deep. This is just to keep the filling in place. Then using a Small Cookie Scoop or a spoon fill each cucumber cup with about a tablespoon of the filling.
• Top with a piece of an avocado and a shred or two of cheese for garnish.
