Cup-Adorning Lemon Cookies

Directions

• Combine butter and sugar in a large bowl. Beat until light and fluffy, about 2 minutes. Add egg, salt, and lemon extract and beat for another minute.
• Add flour and lemon zest. Beat until just combine.
• Wrap dough in plastic and refrigerate for an hour.
• Remove dough from refrigerator. Place dough between two sheets of plastic and roll out to about ¼ inch thick. Cut out shapes with cup adorning cookie cutters.
• Place on a baking sheet and bake at 350°F (180°C) for 10 to 12 minutes. Remove and transfer to wire rack to cool completely.
