Ingredients

  • ½ cup rolled oats
  • ¼ cup plain nonfat Greek yogurt
  • ½ cup pumpkin puree
  • 1 egg
  • 1 Tbsp. maple syrup
  • ½ tsp. cinnamon
  • ¼ of nutmeg
  • ½ tsp. vanilla
  • ¼ cup unsweetened almond milk
  • ½ tsp. baking powder

Directions

  • Place a skillet over medium high heat and spray with nonstick cooking spray
  • Add the oats to your blender or food processor and pulse until they turn into a flour. Add all remaining ingredients except for the baking powder and blend together.
  • Once ingredients are all combined, add in baking powder and mix once more.
  • Using a ¼ cup measure, scoop batter into frying pan, cooking until the edges have set and bubble appear in the centre of the pancake. Use a spatula and flip pancake, cooking 1-2 minutes on the other side.
  • Remove from heat and serve with your favourite toppings!
  • Serves: 6 pancakes
