Easy Cake Mix Lemon Bars

Ingredients

• 1 (15.25oz) Box Vanilla Cake Mix*
• 1/2 Cup Butter - melted
• 1 Large Egg
• Zest of 1 Large Lemon
• 8 ounces Cream Cheese - softened
• 2 Large Eggs
• 2½ Cups Powdered Sugar
• 1/4 Cup Fresh Squeezed Lemon Juice
• Zest of 1 Large Lemon

Directions

• Preheat oven to 350° Mix crust ingredients into a thick dough consistency. Line an 8x8 inch baking dish with foil and spray with nonstick. Press the crust evenly into the bottom of prepared baking dish. Use a hand mixer to combine topping layer ingredients (except lemon zest) until fully incorporated. Stir in lemon zest. Pour mixture over crust. Bake for 40 minutes. The center will still be gooey. Allow to cool completely. Once cooled, remove foil from baking dish and transfer to flat surface. Carefully peel foil from bars. Cut bars and dust with powdered sugar.
