• 7 Egg Yolks
• 2.5 (14-ounce) Cans (36 ounces total) Sweetened Condensed Milk (preferably Eagle Brand)
• 8 ounces Fresh Lime Juice
• Zest of 1 Lime
• 1 Teaspoon Vanilla
• 1 Graham Cracker Crust
• Fresh Whipped Cream

Directions

• Preheat oven to 350 degrees.
• Using a mixer fitted with the whisk attachment, whisk together egg yolks, sweetened condensed milk and lime zest until well blended. (You can also whisk this by hand using a wire whisk and a clean metal bowl.)
• Slowly pour in the lime juice and vanilla and whisk until well combined.
• Gently pour the batter into the graham cracker crust and smooth the top.
• Bake for about 12 minutes or until set.
• Let cool and top with whipped cream.
