    • 2 cups Pasta sauce, red
  • Pasta & Grains

    • 8 Lasagna noodles
  • Oils & Vinegars

    • 4 tbsp Olive oil
  • Dairy

    • 2 cups Mozzarella cheese
    • 1/4 cup Parmesan cheese, grated
    • 1 cup Ricotta cheese

Ingredients

  • 8-12 lasagna noodles, cooked according to directions
  • 4 tablespoons olive oil, divided
  • 1 egg
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 zucchini
  • 1 yellow squash
  • 1/4 cup shredded carrots
  • 1/2 cup mushrooms, chopped
  • 1 cup fresh spinach
  • 1/2 cup diced of each, yellow, red and green pepper
  • 1 small onion, diced
  • 1/8 cup diced garlic
  • 2 cups of red pasta sauce

Directions

  • Preheat oven to 350 degrees.
  • Cook lasagna noodles according to directions, Drain and lay flat on a paper towel.
  • IN your food processor, finely chop all of your vegetables (except your spinach.) Combine into one bowl.
  • In a large saucepan, heat 2 tablespoons olive oil. Add onions and garlic. Cook for 2 minutes. Add remaining vegetables, except for your spinach and cook for 4 minutes. Add spinach and cook until just wilted. Set aside.
  • In a large bowl, add ricotta cheese, 1 cup mozzarella cheese, egg and Parmesan cheese, Mix well. Add cooked vegetables and combine.
  • In an 9x13baking dish, spread 1 cup of pasta sauce evenly on the bottom.
  • Spread 1/4 cup of cheese/veggie mixture down the center of one lasagna noodle. Roll firmly and place seam down in baking dish. Repeat until baking dish is filled.
  • Top rolled noodles with remaining cup of pasta sauce. Cover with foil and bake for 30 minutes. Take off foil and sprinkle with remaining cup of mozzarella cheese. Bake for an additional 6-8 minutes.
  • Take lasagna out of oven and allow to rest 5 minutes before serving.
