Electric Pressure Cooker Rice- Parmesan

  • 1 Garlic clove

  • 1 cup Jasmati or jasmine rice

  • 3 tbsp Butter
  • 1/4 cup Parmesan cheese

Ingredients

• 3 Tablespoons Butter
• 1 Shallot- diced
• 1 Garlic Clove- minced
• 1 Cup Jasmati or Jasmine Rice
• ¾ Cup Cooking Sherry
• 1 Cup Chicken Broth
• ¼ Cup Shredded Parmesan Cheese

Directions

• Pre-heat your electric pressure cooker on Saute setting and melt butter.
• Press cancel and stir in shallots, garlic and rice to toast.
• Pour in sherry and broth
• Place lid on your electric pressure cooker and set to seal.
• Choose rice cycle but do not allow it to kick over to warm setting.
• Naturally vent for 10 minutes and then quick release and immediately remove from heat.
• Fluff rice with a fork and stir in cheese before serving.
