Ingredients

  • Refrigerated

    • 2 Egg whites, small
  • Condiments

    • 1 1/2 oz Lemon juice, freshly squeezed
    • 1 1/2 oz Simple syrup
  • Baking & Spices

    • 1 Sugar cube
  • Beer, Wine & Liquor

    • 1 oz Absinthe
    • 3 oz Gin
  • Liquids

    • 3 oz Water

Directions

  • First, prepare the absinthe. Place the Demerara sugar cube on an absinthe spoon over the cocktail glass you plan to use. Using a bottle dropper, place 3 to 4 on the sugar cube and set it on fire. While on fire, continually disperse the absinthe until you’ve used the ounce and the sugar is dissolved. Let the glass cool, and then add 3 ounces of cold water to the glass to “lush” the absinthe. In a cocktail shaker, combine the gin, lemon juice, simple syrup, and the egg whites. Cover and shake without ice first, and then add ice and shake again. Strain the mixture into the glass over the prepared absinthe. Serve.
