Fried cabbage with bacon and onion

Ingredients

• 1 lb good bacon, finely chopped
• 1 medium onion, chopped
• 2 lb cabbage, finely diced
• 1/4 tsp red pepper flakes
• 1/2 tsp salt
• 1/2 tsp black pepper
• 2 small pinches of sugar

Directions

• 1Fry bacon in large fry pan until it is crisp and brown. Drain and set aside. Keep bacon drippings to use later. 2With adequate amount of bacon drippings in fry pan (about 1 cup), Add onion to bacon drippings and stir until translucent. ADD: Chopped cabbage, pepper flakes, salt, and black pepper. Stirring until all of cabbage is coated, more drippings may be necessary to prevent sticking. ADD: Crumbled bacon bits, pinches of sugar (optional) but the sugar brings out the flavor. COVER and cook over LOW heat until cabbage is tender.
