Gingerbread Overnight Oats are rich with molasses and falls warming spices. Think old-fashioned gingerbread for your morning oatmeal that is gluten-free and is ready when you wake up. Not to mention it makes your whole house smell amazing.

Ingredients

  • 1½ cups gluten-free steel-cut oats
  • ¼ cup of coconut sugar
  • ¼ cup mild molasses
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon ground nutmeg
  • 6 cups of water
  • Raisins
  • Chopped walnuts
  • Unsweetened Almond Milk

Directions

  • In a slower cooker add oats, coconut sugar, molasses, ginger, cinnamon, cloves, nutmeg, and water.
  • Cover and let cook for 8 to 9 hours.
  • Stir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning.
  • Top with raisins, chopped walnuts and a drizzle of unsweetened almond milk
