Greek Style Pitas Bursting With Summer Health

Ingredients

  • ½ red onion
  • 1 small cucumber
  • 125g cherry tomatoes (good handful)
  • 100g soft cheese (like feta)
  • 4 pitas
  • Handful of spinach
  • Hummus to spread
  • Half a lemon
  • Large pinch of oregano
  • Pinch of salt
  • 2-3 flakes red (dried cayenne also goes really well)
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar, balsamic vinegar or any you have

Directions

  • Chop the cucumber, tomatoes, onion, cheese and throw into bowl
  • Add the spinach
  • Squeeze the lemon into a bowl
  • Add the olive oil and vinegar
  • Add the oregano, pepper and salt
  • Mix well and pour over salad
  • Toast the pitas, spread the hummus inside, and fill
  • Serves: 2
