    • 1 cup Edamame, cooked
    • 1 (14 oz can Garbanzo beans
    • 4 cloves Garlic
    • 2 tbsp Green onions
    • 1 cup Herbs
    • 1 large bunch Kale
  • Condiments

    • 2 tbsp Lemon juice
  • Pasta & Grains

    • 1 cup Quinoa
  • Oils & Vinegars

    • 6 1/3 tbsp Olive oil
    • 2 tbsp Red wine vinegar
  • Nuts & Seeds

    • 1/3 cup Walnuts
  • Liquids

    • 2 tbsp Water

Ingredients

  • 1 cup uncooked quinoa
  • 1 avocado, diced
  • 1 cup shelled edamame, cooked
  • 1 (14 oz) can garbanzo beans, drained and rinsed
  • 1 large bunch kale (I used tuscan kale), leaves removed from stems and roughly chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • For the Green Goddess Dressing:
  • 1 avocado
  • 2 cloves garlic
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons water
  • 1/3 cup olive oil
  • 1/3 cup walnuts
  • 1 cup herbs (basil, cilantro, parsley, chives - whatever you have/like!)
  • 2 tablespoons diced green onions

Directions

  • Cook quinoa according to directions on package.
  • In a large skillet, add olive oil and kale over medium-high heat.
  • Cook 4-5 minutes, until bright green and slightly wilted.
  • Add garlic and cook another minute, then remove from heat.
  • Make green goddess dressing by combining all ingredients in food processor or blender and blending until pureed.
  • Place approximately 1/2-3/4 cup quinoa in a bowl and top with avocado, edamame, kale, and chickpeas.
  • Drizzle with Green Goddess dressing.
  • Enjoy!
