Ingredients

  • 2 cups romaine lettuce, chopped
  • ½ cup spinach, fresh
  • ¼ cup scallions, chopped fine
  • ½ cup edamame beans, shelled
  • ½ cup avocado, sliced
  • ½ cup cucumbers, peeled, sliced
  • juice from half a lemon
  • 1 heaping dollop of your favorite hummus

Directions

  • Add all vegetables in a bowl. Top with lemon juice and add a dollop of hummus in the center.
