Grilled Chicken Bacon Sandwiches

Ingredients

• 2 large chicken breasts, halved lengthwise
• 1/3 cup olive oil
• 1/4 cup honey
• Juice from 1 lemon
• 1 1/2 teaspoon chili powder
• 1/2 teaspoon salt
• 1/4 teaspoon pepper
• 4 slices bacon
• 4 slices cheese
• 4 sandwich buns

Directions

• Halve the chicken breasts and place them in a zip-top bag. Whisk together the olive oil, honey, lemon juice, chili powder, salt and pepper. Pour over the chicken and marinade for 2 hours, or however long you have.
• After chicken has marinated, cook over medium heat on the grill.
• While chicken grills, fry 4 slices of bacon. After bacon has fried, brush the inside of the buns with the leftover bacon grease and place them in a cooler area of the grill to lightly toast.
• When chicken is almost cooked through, place a slice of cheese on top of each chicken half and place one slice of bacon, broken in half, on top of the cheese. Allow to melt and finish cooking chicken.
• Place on toasted buns and enjoy!
