Ingredients

  • 6 slices of ciabatta bread (or any similar bread)
  • 1 ripe avocado
  • 5 oz/150 g haloumi
  • 3 tbsp pomegranate molasses

Directions

  • Start with haloumi. Cut the cheese block into six 0.5 inch (about 1 cm) slices (youll have leftover haloumi). Heat a non stick skillet over medium hight heat. Grill haloumi slices about one minute on each side or until golden brown. Set aside. When haloumi is cool enough to handle, cut each slice in three pieces.
  • Toast the bread slices. In a small bowl, mash the avocado and season with salt and pepper to taste.
  • Spread 1 heaping tablespoon of mashed avocado on each bread slice. Top with grilled haloumi and drizzle with pomegranate molasses. Serve immediately.
