    • 2 Hass avocados
    • 1 Lime
    • 1/2 Red onion
    • 1 Tomato

    • 1 cup Quinoa, cooked
  • Baking & Spices

    • 1 S&p

    • 2 tbsp EVOO

  • 1 cup quinoa, cooked
  • 1 tomato, chopped
  • 1/2 red onion, chopped
  • 1 garlic clove, minced
  • 2 hass avocados, chopped
  • 1/2 cup cilantro, chopped
  • 1 lime and zest of 1/2 lime
  • 2 tbsp EVOO
  • S&P to taste

Directions

  • In a large bowl, mix the tomatoes, onion, cilantro and avocado with the cooked quinoa. In a separate bowl, mix in the EVOO, Lime juice, zest, and garlic. Pour over the quinoa mixture and season with s&p to taste.
