The perfect warm breakfast for cool crisp mornings!

Ingredients

  • 2 cups old-fashioned oats (gluten-free as needed)
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup finely chopped apple (I used Fuji + very thin apple slices for topping, if desired)
  • 2 large eggs
  • 1 cup unsweetened vanilla almond or cashew milk (any milk product can be used)
  • ¼ cup coconut oil, melted
  • ⅓ cup unsweetened applesauce
  • 3 tablespoons Splenda brown sugar blend or several packets Stevia or ⅓ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon allspice
  • Optional garnish: whipped topping, ice cream, nut/seed butter and/or fresh fruit

Directions

  • Preheat oven to 350°F. Spray an 8- by 8-inch baking pan with cooking spray.
  • In a large bowl, combine oats, baking powder, salt and diced apple.
  • In a medium bowl, beat eggs and stir in milk, coconut oil, applesauce, brown sugar, cinnamon, nutmeg and allspice. Stir milk mixture into oat mixture until all ingredients are well combined.
  • Pour into prepared baking pan and top with thinly sliced apple. Bake for 25 minutes or until set and light golden brown on top.
  • Allow to cool in the baking dish for at least 5 minutes before slicing. Serve with optional garnishes- enjoy!
