Healthy Apple Cinnamon Muffins - fresh apples, greek yogurt, and oatmeal make these muffins delicious and the perfect breakfast choice

Directions

  • Preheat oven to 350.  Line a muffin pan with paper liners or spray with baking spray. Set aside.
  • In a large mixing bowl, combine flour, oats, baking powder, baking soda, cinnamon, and salt.
  • In a separate bowl, beat the egg. Add in yogurt, applesauce, brown sugar, vanilla, and grated apple, stirring until well-combined.
  • Add wet ingredients to dry ingredients, mixing until just combined.
  • Spoon batter into 12 muffin cups, filling almost to the top.
  • Bake for 20-22 minutes, or until top is firm to the touch and toothpick inserted into the center comes out clean.
