    • 500 g Mascarpone
    • 200 g Sour cream
    • 100 g Yogurt, Plain

Directions

  • Place the dates in a bowl and pour the hot water on top. Cover with a plate or a lid and let stay for 1-2 hours.
  • In a food processor or blender puree the dates together with any remaining liquid from the bowl. It is ok if small chunks remain.
  • Preheat oven to 180 degrees Line the bottoms of two 17-20 cm cake pans with circles of parchment paper and grease well inside.
  • In a bowl combine spelt flour and baking powder and stir to blend.
  • In a large bowl beat olive oil and maple syrup until homogeneous. Add the eggs, one by one and continue beating. Add yogurt, grated apple and date puree and beat at lower speed until well combined. At the end fold in the flour mixture until just absorbed.
  • Divide the batter between the two pans as equally as possible. Bake the cakes for about 30 minutes or until a toothpick inserted in the middle comes out clean. Let the cakes cool for 5 minutes before removing them from the pans. Transfer to a wire rack to cool completely.
  • In a large bowl combine all ingredients and beat at high speed for 5 minutes.
  • Arrange the cake:
  • When the cake bases are completely cold, cut each one horizontally in 2 halves with a serrated knife. Place 1 half on a cake stand and cover with some frosting. Continue the process with the other 3 layers. Pour all the remaining frosting on top of the cake: if it is a lot, it will leak down and will look like snow. Decorate the cake with cookies, sprinkles or coloured sugar.
