Packed with fresh vegetables, zucchini noodles and a flavor-packed sauce, it makes the perfect easy weeknight meal and so much better than takeout!

Ingredients

  • 4-5 medium zucchini
  • 1 medium chicken breast, cut into 1 inch chunks
  • 1 tablespoon olive oil
  • 1 each of red and yellow bell pepper, thinly sliced
  • 1-2 cups of a mix of snow peas, bok choy and thinly sliced carrots
  • 1 tablespoons chopped fresh cilantro, for garnish (optional)
  • For the sauce
  • 2 tablespoons cornstarch (or use arrowroot powder)
  • 1/3 cup low-sodium soy sauce (gluten free tamari or coconut aminos for a paleo version)
  • 2 tablespoons oyster sauce (use gluten free or vegan if necessary)
  • 1 teaspoon honey
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon fresh ginger, minced
  • 1-2 tablespoons water, plus more as needed to thin out sauce

Directions

  • Cut zucchini into noodles with spiralizer, julienne tool or mandolin.
  • Set aside on a plate covered with paper towels and pat dry.
  • In a medium bowl, whisk together all the ingredients for the sauce, until combined. Set aside.
  • Season chicken with salt and pepper. Heat oil in a large wok or skillet on medium high heat. Add chicken and cook until brown on all sides, about 3-4 minutes. Transfer from pan onto a plate. Set aside.
  • Add additional 1 tablespoon of olive oil to the same skillet. Add the peppers, snow peas and bok choy and cook for about 2 minutes.
  • Add zucchini noodles and chicken back to the pan. Gently stir sauce and pour over noodles, tossing to make sure everything is coated, using tongs or chopsticks. Adjust seasonings and allow sauce to thicken and bubble, add more water to thin out sauce as needed. Once the zucchini noodles are just tender (about 1-2 minutes), remove from stove - do not overcook. Serve immediately and garnish with sesame seeds if desired.
