This Healthy Gingerbread Mug Cake is gluten free, vegan, paleo, and contains no butter/oil or refined sugar! Made in 2 minutes, all you need is a mug, a spoon, a microwave, and a few ingredients!

Ingredients

  • •3 tbsp gluten-free flour *
  • •1 tsp ginger (ground)
  • •1 tsp cinnamon (ground)
  • •2 tbsp molasses OR maple syrup OR honey
  • •1 tbsp Greek yoghurt **
  • •2 tbsp milk
  • •1/2 tsp caramel or vanilla extract (optional)
  • •1/4 tsp baking powder
  • •1 dollop ice cream
  • •1 tbsp molasses ***

Directions

  • In a small bowl or mug, mix all ingredients except the baking powder. Once everything is thoroughly combined, gently stir in the baking powder.
  • Microwave for 1 - 2 minutes (mine took 1min 30, but microwaves vary so try 1 minute, then in 10-second bursts until soft and cake-y).
  • Serve and enjoy!
