Ever wonder why its called Salisbury Steak? It was invented by Dr. J. H. Salisbury, who was an early proponent of a low-carbohydrate diet for weight loss; the term Salisbury steak has been in use in the U.S. since 1897. Nineteenth Century ideas of low-carb mustve been very different from ours today! Salisbury Steak has been a favorite in our house for years. I like to double the recipe and cook it in my electric skillet so we can freeze the leftovers for a quick future meal.

Ingredients

  • 1 lb ground beef
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1 tsp worcestershire or a1 sauce
  • 1 egg
  • 1/4 c dry bread crumbs
  • 2 Tbsp butter, margarine or oil
  • 1 onion, sliced
  • 2 Tbsp flour
  • 2 c swansons beef broth, or 2 c. water + 2 t. beef bouillon crystals

Directions

  • 1In a mixing bowl, combine ground beef, pepper, salt, garlic powder, Worcestershire or A1 sauce, bread crumbs and egg. Stir mixture together well and shape into four patties. 2On medium heat, brown patties on both sides in butter, margarine or oil. Remove from skillet and set aside. 3Separate onion slices into rings and add to the skillet. Reduce heat to medium low and cook until the onions turn translucent and brown, about 20-25 minutes. 4Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook a few minutes until the flour is nicely browned. Then stir in the beef broth. 5Add beef patties back into the skillet and spoon a little gravy over each patty. Bring to a boil, reduce heat and cover skillet. Simmer for about 15 minutes. 6NOTE: Alternatively, you may use sliced fresh mushrooms instead of the onion.
