  • 2 cups flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup sugar
  • 1 cup pumpkin puree
  • 4 tbsp shortening
  • 1/3 cup milk

Directions

  • Preheat oven to 400 and grease medium baking dish.
  • In small mixing bowl, combine sugar, pumpkin and milk. Set aside.
  • In medium mixing bowl, combine flour, baking powder and salt.
  • Using a pastry cutter or fork, cut shortening into flour mixture until crumbly.
  • Add pumpkin mixture to flour mixture and combine until just moistened.
  • Turn out on lightly floured surface and knead 3-4 times until soft dough forms.
  • Roll out dough to 1/2 thickness and cut into circles using biscuit cutter (a cup or jar will work in a pinch).
  • Place biscuits in greased baking dish and cook 20 minutes.
  • Serves: 12 biscuits
