I like to serve Keto Mac n Cheese with a crisp green salad, since it’s pretty rich. Also nice with some steamed buttered vegetables. I would also add that this reheats quite nicely.   • 1/2 tsp Salt
  • 1 Head Cauliflower (diced in bite-size pieces)
  • 1 tsp Salted Butter
  • 1 Cup Heavy Cream
  • 2 oz Plain Cream Cheese
  • 1/2 tsp Dijon Mustard
  • 1/2 Mixed Shredded Cheese
  • 1/8 tsp Garlic Salt, Onion Granules & Chili Powder (each)

Directions

  • Preheat oven to 375 degreesGrease a casserole or baking dish with butter (real grassfed goodness here, no margarine!)Boil or steam cauliflower until slightly tender, about 5 minutesDrain the cauliflower and shake off excess water with a fine mesh strainerTransfer the cauliflower to the casserole and set asideBring cream to a simmer in a saucepan, then whisk in the cream cheese and mustard until combinedIncorporate 1 cup of the cheese, and seasonings and whisk just until the cheese melts, about 1 to 2 minutesRemove from heat, pour over the cauliflower, and stir to combine (Try not to lick the saucepan, its hot! )Top with the remaining 1/2 cup cheese and bake until browned, about 18 minutesServe your Keto mac n cheese hot with a green salad or buttered vegetables
