These are the keto version of Mounds bars! Low-carb and high-fat. 1.5 g net carbs per ball and 11 g of fat per ball.

Ingredients

  • FILLING
  • 2 c. shredded unsweetened coconut
  • 1/4 c. coconut oil (may need to add 1 T. extra)
  • 1/2 t. vanilla extract
  • 4 T. butter, melted
  • Stevia in the raw or liquid stevia to taste (I used 2 packets)
  • COATING
  • 3 squares unsweetened baking chocolate
  • 1 T. coconut oil
  • Stevia in the raw or liquid stevia to taste

Directions

  • In food processor, combine first 5 ingredients. Refrigerator until set. Dont allow to refrigerate too long, or the dough will become rock hard!Roll into ~1 balls (a little smaller). Place on parchment paper-lined baking sheet. Refrigerate.In saucepan, melt chocolate. Add coconut oil and sweetener. Dip coconut balls completely into chocolate mixture and return to baking sheet.
