• Sugar

Directions

• Instructions: Using a sharp knife, cut the scoby into 1-inch chunks. Mix the scoby pieces with sugar, using about the same amount of sugar as there are scoby pieces, to thoroughly coat. Put the coated scoby into a pot and heat to boiling. Boil for 15 minutes, then cool slightly. Pour off extra syrup and spread on parchment paper to cool completely.
