6 fresh figs, washed (but not peeled) and halved along their length
1 packet halloumi cheese
6 strips of prosciutto (Parma ham), cut in half across their width
12 large fresh mint leaves
2 Tbsp honey, warmed
12 cocktail sticks
Directions
Brush the open faces of the figs with the warmed honey.
Grill face up for a few minutes, until they start to shrivel. If you want grill lines on the tops, turn them over for a minute before removing from the grill and setting aside.
Assemble your stacks by skewering one fig half (face up), then one mint leaf, then a folded piece of prosciutto. Repeat with all 12 and set aside.
Cut the halloumi into 6 slices across its width and place the slices on the grill. Turn over after 5 minutes and grill the other side. Remove from the grill, cut each slice in half to make near-squares and use one as the base of each stack.
