Loaded Chili Sweet Potato Fries with all your savory paleo and Whole30 friendly favorites! Chili, bacon, avocado, paleo ranch sauce, scallions and a fried egg make this loaded fries heaven.

More than a little into running and paleo recipes (yoga now too!) but Im not here to rain on your grains (or anything else) so come along for the ride! I do a little too much of everything (except cleaning), and I enjoy laughing at myself. As long as Im the one making the jokes, that is. Just kidding. So bring me your angst, your appetite and your frying pan and climb aboard!

Ingredients

  • 1 recipe for Crispy Baked Sweet Potato Fries (youll need 2 medium sweet potatoes)
  • 2 tsp cooking fat of choice (I used bacon fat)
  • ½ lb ground grass fed beef or bison
  • ¼ cup diced tomatoes, drained
  • ¼ tsp cumin
  • ½ tsp chipotle chili powder
  • ¼ tsp smoked paprika
  • ¼ tsp salt
  • ¼ cup Paleo ranch sauce (link to my recipe)
  • 4 slices cooked and crumbled nitrate free, sugar free bacon
  • Thinly sliced scallions or fresh chives
  • ½ medium avocado, sliced or diced
  • 2 eggs, fried with soft yolks*

Directions

  • Prepare the fries as directed in this post.
  • While the fries bake, heat a medium-large heavy skilletover med/hi heat and add your cooking fat. Add the ground meat, breaking up lumps with a spoon, followed by the diced tomatoes and all of the spices, plus salt. Stir and cook until the meat is just browned, then remove from heat.
  • Make your ranch sauce if you havent already, and get your toppings ready.
  • Once the fries are baked, allow them to cool just a bit so you can handle them, then arrange on a plate or platter.
  • Top the fries with the chili, crumbled bacon, ranch sauce (I piped mine on using a simple plastic bag cut on one corner), avocado, fried eggs, and sliced scallions or chives.
  • Serve right away and enjoy!
