Light and fruity, with just a hint of tropical coconut, my luxury vegan mincemeat may be a traditional British Christmas favourite but its packed with ingredients from our past five years of living all over the world.

Ingredients

  • 4 large apples, cored and grated (no need to peel)
  • 75g (2.6 oz) golden sultanas
  • 75g (2.6 oz) brown sultanas
  • 75g (2.6 oz) raisins
  • 75g (2.6 oz) dried figs, chopped
  • 75g (2.6 oz) prunes, chopped
  • 75g (2.6 oz) dates, chopped
  • 25g (1 oz) desiccated coconut
  • 100g (3.5 oz) palm sugar
  • 1½ tsp tsp ground ginger
  • ½ tsp ground cinnamon
  • ½ tsp freshly-grated nutmeg
  • 1½ tsp allspice
  • ⅛ tsp ground cloves
  • 300ml (1.25 cups) coconut oil
  • zest and juice of 2 large oranges

Directions

  • In a large ovenproof bowl, combine everything, mix well, cover with a clean tea towel, and leave to marinate overnight.
  • Heat your oven to 110°C (225°F), give the mincemeat a good stir, cover loosely with tin foil, and allow it to gently cook for 2 hours in the oven.
  • Remove from the oven, take off the tin foil, and give the mincemeat another thorough stir.
  • Set aside to cool, stirring occasionally to make sure the coconut oil is evenly distributed, and that everything is coated.
  • Once the mincemeat has cooled, put into sterilised jars, and seal.
  • If unopened, this luxury vegan mincemeat will keep for at least a year - maybe longer. Once opened, it will keep in the fridge for at least a month (I havent had it hanging around for longer!).
