Ingredients

  • 2 cups self raising flour
  • ¾ cup sugar
  • 3-4 teaspoon matcha tea powder
  • 60g butter, melted
  • 3 overripe bananas, mashed
  • 1 cup milk
  • 1 tsp vanilla essence
  • 1 egg

Directions

  • Preheat oven to 180 degrees Celcius
  • Mix all dry ingredients together in a large bowl, making a well in the middle.
  • Stir in the wet ingredients and mashed banana, mixing until just combined.
  • Distribute evenly between muffin cases and bake in the oven for 25-30 minutes or until slightly browned on top and spring back to touch.
  • Allow to cool on a rack and store in an airtight container when completely cool.
  • Serves: 12-15
