• 1 cup flour
• 1/4 cup + 2 tablespoons sugar
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 1/4 cup butter - melted
• 1 egg
• 1/4 cup + 2 tablespoons milk
• 1 teaspoon vanilla
• 2 tablespoons flour
• 1/3 cup sugar
• 1/2 teaspoon cinnamon
• 2 tablespoons butter - melted

Directions

• Preheat oven to 350 degrees. Spray a mini muffin pan with nonstick spray. For the muffins: In a large bowl combine flour, sugar, baking powder and salt. Add in melted butter and mix with fork so the mixture is crumbly. Add egg, milk and vanilla. Continue mixing with a fork so everything is combined. Pour this mixture into the mini muffin pan - it should fill up approximately 16 muffins. For the crumble topping: In a small bowl combine flour, sugar and cinnamon. Add melted butter and mix with fork so the mixture is crumbly. Sprinkle this mixture on top of the muffins. Keep sprinkling until its all gone. Bake for 14-15 minutes. Let cool for 10 minutes before removing muffins from pan.
