Mocha Poke Cake

  • 1 Boxed chocolate cake mix
  • 3 tbsp Chocolate sprinkles or mini chocolate chips
  • 1/2 cup Powdered sugar

  • 1 3/4 cups International delight mocha iced coffee

  • 3/4 cup Condensed milk, sweetened
  • 1 pint Heavy cream

Directions

• Preheat oven to 350°F. Prepare the cake mix according to the box directions but swap the water for an equal amount of International Delight Mocha Iced Coffee. My cake mix called for 1 1/4 cups water so that is how much Iced Coffee I used. Stir 2 teaspoons espresso powder into batter. Pour the batter into a greased 9x13 pan. Bake according to package instructions, about 30 minutes.
• Allow the cake to cool for 10 minutes. Meanwhile, prepare the filing. Whisk sweetened condensed milk, 1/2 cup International Delight Mocha Iced Coffee and 1 teaspoon espresso powder. Poke the cake all over with the back of a thin wooden spoon. Pour the condensed milk mixture evenly over the cake, allowing it to soak into the holes. Let the cake cool to room temperature, then cover and refrigerate until chilled.
• Whip heavy cream, powdered sugar and 2 teaspoons espresso powder until stiff peaks form. Spread over the cooled cake. Top with sprinkles, mini chocolate chips, and/or fudge sauce.
