Ingredients

  • 4 russet potatoes, washed and cut into even strips (peeling is optional)
  • ¼ cup finely chopped parsley
  • ⅓ cup freshly grated parmesan cheese
  • 2 Tablespoons oil
  • 2 teaspoons creole seasoning (I used Zatarains Big & Zesty)

Directions

  • Preheat the oven to 400 degrees.
  • Wash, peel and cut the potatoes into strips. Soak in water and dry well.
  • On a parchment paper lined baking sheet, toss the potatoes, creole seasoning and oil. Using your hands, toss well until everything is evenly coated.
  • Bake for 20 minutes, checking after 10 minutes to flip for even browning.
  • Remove from oven and coat potatoes with fresh Parmesan and parsley.
  • Serve hot with a little mayo and ketchup.
