New Year's Eve Rum Berry Cocktail

  • 250 g Berries, frozen mixed
  • 510 ml Pomegranate, juice
  • 90 g Raspberries, fresh
  • 3 sprigs Thyme, fresh

  • 240 ml Spiced ginger beer

• Frozen

  • 30 ml Cointreau
  • 90 ml Spiced rum

Ingredients

• 90ml (1/3 cup) spiced rum (I use Kraken spiced rum)
• 510ml pomegranate juice (100% juice, not the diluted kind)
• 30ml (2 tbsp) Cointreau
• 240ml (1 cup) spiced ginger beer
• 250g (2 cups) frozen mixed berries
• Ice (optional)
• 90g (3/4 cup) fresh raspberries
• A few sprigs of fresh thyme

Directions

• Pour the rum, pomegranate juice, Cointreau and ginger beer into a large jug. Stir to mix.
• Half fill 4-6 glasses with frozen berries (add a little ice to if you want to).
• Fill the glasses with the cocktail, then top with a few fresh raspberries and a sprig of fresh thyme before serving.
