    • 1 Combination of fruit desired
    • 1/2 Lime, Juice of
  • Canned Goods

    • 1 can Coconut milk, full-fat
  • Condiments

    • 4 tbsp Maple syrup, pure
  • Baking & Spices

    • 1 Dash Sea salt
    • 2 tsp Vanilla, pure
  • Nuts & Seeds

    • 1 3/4 cup Cashews, raw
    • 1/3 cup Coconut, unsweetened

Ingredients

  • 1 3/4 c raw cashews
  • 2-3 T pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/3 c shredded coconut, unsweetened
  • Dash of sea salt
  • 1 can or 1 c full fat coconut milk (refrigerated overnight) or 1 c whipping cream
  • 1 tsp pure vanilla extract
  • 2-3 T pure maple syrup
  • Juice of 1/2 lime
  • any combination of fruit desired

Directions

  • In a food processor, add cashews and process until fine and grain like. Add in all other crust ingredients and process until dough like. Press firmly into an 8 in. pie dish lined with parchment. (It looks so much prettier without the parchment, but trust me, USE it. Cutting it will be a breeze if you do!) Allow to freeze for about 10 minutes. While crust is in the freezer, add coconut milk to a mixing bowl, and with a hand mixer, whip for about 2-3 minutes or until a fluffy, whipped texture. Add in all other ingredients and beat again for about 60 seconds. Spread whipped topping over crust and allow to set in the freezer for about 5-10 minutes. Cut and prep fruit you will use during this time. Once whipped topping is pretty solid, arrange fruit as desired. Allow to chill until ready to serve. When ready to serve, remove from pan and cut into pieces.

  I had planned to get this recipe up sooner than later. However the other week when I went to make it, all of the fruit was super mushy. That is not picture worthy at all. So that pushed back sharing this recipe a bit. I am pumped to at least have it ready a few days before 4th of July as it is a great treat you may want to share at your gathering to celebrate Independence Day. Do you remember when ready to go cookie dough started popping up on shelves in the grocery? We were blown away by how easy it was. How did we survive when we actually had to MAKE our own cookie dough?! Ha. And from this craze, came the fruit pizza made so easily with sugar cookie dough straight from the package! Well, the thing about pre-packaged cookie dough is lots of junk is added to preserve it. So let’s try something else for a change and use fresh, real ingredients! I played around a bit recently with the cashew crust I made for my No Bake Samoa Bars and thought it would be perfect for a fruit pizza. And it worked very well! …
