Crusty, no-knead whole wheat chia bread is loaded with seeds and oats but requires minimal prep work and no kneading! Assemble the dough in just a few minutes!

Ingredients

  • 2½ cups all-purpose flour
  • ½ cup whole wheat flour
  • 2 Tbsp vital wheat gluten
  • ¼ tsp yeast
  • 1 tsp sea salt
  • 2 Tbsp chia seeds
  • 2 Tbsp sunflower seeds
  • ½ cup organic oats
  • 1¾ cup lukewarm water
  • 1-2 Tbsp wheat bran

Directions

  • Combine all dry ingredients except wheat bran in a large bowl.
  • Add water to dry ingredients, Mix dough just until combined.
  • Cover and put it somewhere warm where it wont be disturbed for 12 hours. When its ready, it will be covered with tiny air bubbles and doubled in size.
  • Preheat to 450 degrees.
  • Fold the dough a few times, put it back in the bowl. Let sit for 30 minutes.
  • While the dough is rising put the dutch oven into the oven for 30 minutes to heat up.
  • Sprinkle wheat bran into the bottom of the hot pot, add any toppings you want, and replace the lid.
  • Bake for 30 minutes, covered.
  • Remove the lid and continue baking for 20 additional minutes. Carefully remove from the oven.
  • Take the bread out of the hot pot and put on a cooling rack for 1 hour.
  • Once cooled, slice and enjoy.
  • Serves: 1 loaf
