  • 3 tbsp. butter
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1 packet dry yeast
  • 4-6+ cups plain flour
  • Filling
  • 3/4 cup butter, softened
  • 1 cup white sugar
  • 3 tsp grated orange peel
  • Glaze
  • 2 cups icing sugar
  • orange juice to thin

Directions

  • Heat the milk in the microwave for 2 1/2 minutes or on the stovetop until hot but not boiling. Meanwhile add 1 tsp of sugar to 1/2 cup of lukewarm water and stir until the sugar is dissolved. Sprinkle over the yeast and stand for 10 minutes to activate the yeast.
  • Place the hot milk with the butter, sugar, salt and yeast mixture in a large bowl of a stand mixer with a dough hook and mix to combine. Add 4 cups of the flour and then gradually add enough extra flour until the dough comes away from the sides and base of the bowl. Stop at least once during this time to push it from the top of the dough hook down to the bottom of the bowl so it mixes evenly. When its no longer sticky to touch, transfer the dough to a lightly greased large bowl, cover with cling film and place in a warm spot for 1 1/2 hours or until doubled in size.
  • Punch down dough and divide into two. Roll the dough out into rectangles approximately 12 x 8 inches.
  • Combine the filling ingredients together and spread half the mixture over each dough base.
  • Roll up each rectangle starting with the longer side like a jelly roll. Seal the edges by pinching them together. Cut each roll into 12 pieces with a sharp knife and place into greased muffin tins, cut side down.
  • Cover with non-stick baking paper and return to a warm spot for 45 minutes to rise.
  • Pre-heat oven to 190C/170C fan-forced/375F.
  • Bake for 15-20 minutes or until golden and immediately remove from the trays onto wire racks so they dont stick.
  • Combine the icing sugar with enough orange juice to make a runny glaze and pour over the tops of the hot rolls. Start devouring them and freeze the rest once you start to feel sick!
