Ingredients

  • 3 cups gluten free quick oats- flavored or plain
  • 1 cup blueberries
  • 1/2 c 1 tbsp gluten free pancake mix or gluten free mutli purpose flour
  • 3/4 cup almond milk (or coconut milk)
  • 1 egg (see notes for egg free or vegan version)
  • 1/2 cup coconut sugar- or more if youd like sweeter
  • 1 tsp baking powder
  • 1 tsp Vanilla 
  • 1/4 tsp salt
  • 2-3 large strawberries sliced (for that red patriotic color)
  • 1 -2 tbsp chopped nuts or pumpkin seeds (optional)

Directions

  • Preheat oven to 350F. Grease a baking sheet. Set aside.
  • In a large bowl, combine all your ingredients, fold in your strawberry slices last
  • Use a cookie scooper and place on baking tray 1 inch apart.
  • These cookies will be more like cluster and wont spread much.
  • Bake for 22-25 minutes or until golden brown on bottom.
  • Remove and cool for 5 minutes.
  • Store in air tight container or freezer for later.
