Ingredients

  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 5 red potatoes, unpeeled and quartered
  • 1/2 lb baby carrots, halved
  • 1 pack Smithfield Marinated Roasted Garlic & Herb Pork Tenderloin (1.15 lbs)

Directions

  • Preheat oven to 425 degrees Fahrenheit.
  • Spray a 9x13 baking dish with oil.
  • Place the pork tenderloin in the middle of the baking dish. Place carrots on one side of the pork and the potatoes on the other side.
  • To season carrots, use a mixture of 1/2 tsp olive oil and 1/4 tsp Italian seasoning. Toss them to coat well. Follow the same procedure for the potatoes.
  • Roast for 35-40 minutes.
  • Let cool for 5 minutes before slicing.
  • Serve and enjoy!
