These might be the BEST fajitas you will ever try. The spices are just perfect and they are so simple to make.

Ingredients

  • Seasoning:
  • 1 tablespoon chili powder
  • ½ tablespoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • Fajitas
  • 1 large onion, thinly sliced
  • 3 bell peppers (green, yellow, red) thinly sliced
  • 2 tablespoons olive oil
  • 1¼ pound shrimp, deveined and shells removed
  • 10-12 tortillas
  • Optional Toppings:
  • Lime Wedges
  • Sour Cream
  • Salsa
  • Avocado
  • Cilantro

Directions

  • Preheat the oven to 400 degrees. Cover a large baking sheet with foil or a 13 by 9 inch glass dish.Set aside
  • In a small bowl combine all of the seasonings together. set aside
  • Slice up the onion, and pepper and place in a medium to large size bowl. Drizzle with the 2 tablespoons of olive oil, toss, and then add ¾ of the seasonings to the bowl. Toss until everything is well coated. Spread the veggies onto the prepared sheet and bake for 35 minutes. About half way through baking make sure to remove the veggies and flip them over, to ensure even baking.
  • While the veggies are cooking prepare the shrimp. add the deveined/shelled shrimp to a medium bowl, drizzle one tablespoon of olive oil over the shrimp, toss, and then add the rest of the seasoning mixture to the shrimp. Make sure that the shrimp are evenly coated. set aside
  • Once the veggies have cooked for 35 minutes push the veggies to one side of the pan, place the shrimp on the other side. Bake for 5-6 minutes or until the shrimp are cooked all the way through. This may take longer and will depend on the size of your shrimp.
  • Remove from oven and serve on warm tortillas or even over rice. Top with your favorite toppings and enjoy.
