Quick scallops recipe with a curried lemon butter.

Ingredients

  • 1 lb Sea Scallops, Sustainable preferably
  • 1 1/2-2 tsp curry powder
  • juice of one lemon
  • 3 tbsp ghee (clarified butter)
  • salt and pepper to taste

Directions

  • Remove the hard muscle from the scallops. Rinse and pat dry. Season with salt and pepper. Heat 1/2 tsp of ghee in a large pan over medium high heat. Place scallops in pan. Saute for two minutes each side. Remove the scallops and set aside. Reduce heat and the remaining ghee and also add the curry powder and lemon juice. Simmer for one minute. Return the scallops back to the pan and coat the scallops with the sauce. Garnish with cilantro.
