Descrition: | This parmesan crusted salmon is one of those meals that I go to when I need to get dinner on the table quickly. And not only is it quick but it tastes great and it's so easy! You really can add this crispy parmesan crust to almost any fish and it comes out perfect every time. It's leaves the fish moist and gives it a ton of flavor! I am actually not normally a huge fan of salmon but I love it with this topping. It really makes for an easy meal and it looks like you put a lot of effort into it even though you don't have to! The first time I was making this my husband had let me know that he wasn't hungry since he had just eaten. Well, I think the smell enticed him because he ended up eating a full serving and raving about how good it was! So much for a full stomach huh!? CLICK HERE TO PIN THIS RECIPE FOR LATER! So here's what you need: 4 salmon fillets 1/4 cup parmesan cheese 3/4 cup panko breadcrumbs (plain 1.5 tsp garlic powder 1 tsp salt 2 tbsp chopped parsley (optional but recommended Zest from one whole lemon (HERE'S a zester if you don't have one 1/2 cup mayonnaise Pre-heat the oven to 450. Combine all of your ingredients except for the salmon in a bowl and mix together. I know the mayonnaise seems weird but it's what gives this so much moisture and bonds everything together! Spray a pan with non-stick spray and lay your salmon fillets on the pan. Take the panko mixture and spoon it evenly on each of the 4 fillets. I just my hands to kind of pile it on top. I also like to sprinkle a little extra parmesan on top...just because : Bake the salmon for 15 minutes and enjoy!
