Ingredients

  • 1 box Chocolate Cake Mix
  • 1 small box instant chocolate pudding
  • 1 cup sour cream
  • 1/2 cup oil
  • 1 cup water
  • 4 eggs
  • 1 cup chocolate chips (optional)
  • 42 Reeses Peanut Butter Cups
  • 1/2 cup butter, room temperature
  • 1 cup creamy peanut butter
  • 3 1/2 cups powdered sugar
  • 3 tablespoons milk
  • 1/8 tsp vanilla

Directions

  • C: Preheat oven to 350 degrees.
  • C: Using a large bowl pour the cake mix into the bowl.
  • LSC: Using a whisk, stir the cake mix to get rid of any large clumps.
  • C: Add in the sour cream and chocolate pudding.
  • LSC: Pour in the oil and water and stir together.
  • C: Add eggs and stir again.
  • *LSC: Add chocolate chips and stir again (optional).
  • LSC: Place cupcake liners in a muffin tin and unwrap peanut butter cups.
  • C: Using a small cookie scoop, fill liners with a scoop of cake batter, minus a little cake batter to account for the space the PB cup takes up. So just a little less than one full scoop.
  • C: Place a PB cup in each liner.
  • LSC: Press down on the PB cup in the batter.
  • C: Add a teaspoon, or less, of batter on top of the PB cup and even out the batter for even baking.
  • C: Bake for 12-15 minutes.
  • C: While cupcakes are baking prepare frosting.
  • C: In a small bowl add the butter and peanut butter.
  • C: Using an electric hand mixer, whip the butter and peanut butter together.
  • LSC: Add in the powdered sugar, milk, and vanilla.
  • C: Beat all the ingredients together until it is smooth and creamy.
  • C: Remove cupcakes from the oven and allow to cool completely before frosting.
  • C: Frost cupcakes and place a small cut-up piece of a PB cup on top.
  • Serves: 42 cupcakes
