    • 2 Dash Sea salt
    • 1 tsp Vanilla
  • Nuts & Seeds

    • 1/2 cup Chia seed
  • Dairy

    • 1 cup Milk

Ingredients

  • 1 c milk of choice (I used unsweetened almond milk)
  • 1/4 c chia seeds
  • 3 T cacao powder, unsweetened
  • 1/2 tsp vanilla extract
  • Dash of sea salt
  • 1 T pure maple syrup
  • 1 c almond milk
  • 1/4 c chia seeds
  • 3 T natural creamy peanut butter
  • 1/2 tsp vanilla extract
  • 1 T pure maple syrup
  • Dash of sea salt

Directions

  • In separate mixing bowls, whisk together all ingredients for each of the layers. Chill in fridge for about 2 hours. Once pudding is set, layer into small serving dishes. Garnish with dark chocolate shavings if desired. Chill until ready to serve.

While it has been said that peanuts and peanut butter can cause inflammation, peanut butter is just one of those things that I have no intention of giving up. I just love it. One of my nephews can’t stand peanut butter and it makes me wonder if we are really related. It baffles me. I also understand peanut allergies are a very real and serious thing so I like to be sensitive to those living with this issue as well. Hopefully, almond butter or another seed butter has become your favorite and you can always sub one of those for the peanut butter. Once you mix it with the chocolate, you can’t go wrong. I will tell you one thing, chia pudding can be very hard for people who have a thing about texture. And there really is a solve for that!
