  • 2 cups all purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup {1 stick} cold butter, sliced into pieces
  • 1/4 cup heavy cream
  • 1/4 cup + 2 tablespoons whole milk
  • 2 teaspoons almond extract
  • 2 additional tablespoons heavy cream
  • 2 tablespoons melted butter
  • More sugar, for sprinkling
  • About 2 pints strawberries, hulled and sliced
  • 1/4 cup sugar
  • 2 tablespoons water
  • 1 cup heavy whipping cream
  • 3 tablespoons confectioners sugar
  • 1/2 teaspoon almond extract

Directions

  • Preheat oven to 425 degrees F.
  • Sift dry ingredients together.
  • Cut in the cold butter until mixture resembles coarse crumbs.
  • Stir in cream and almond extract.
  • Gradually stir in the milk until the mixture just starts to come together. The specified amount is usually how much it takes for my dough to reach this point, adjust as necessary for your dough. It should be the size of pea gravel and stick together when pressed.
  • Portion dough into 8 pieces, lightly pressing it into a ball with your hands and then placing on a parchment lined baking sheet and flattening it slightly until its about 1 1/2 inches thick. Do not over-handle the dough, this will make it tough.
  • Mix the cream and butter together and brush the tops of the cakes with it.
  • Sprinkle sugar on the top of each cake.
  • Bake for 10 minutes, until the sugar is crisp and the tops start to crack.
  • Combine the sliced strawberries, sugar and water.
  • Mix and set aside to macerate for at least 30 minutes.
  • If time allows, chill the bowl youll be whipping the cream in for at least 30 minutes. This allows everything to come together better.
  • Combine cream, sugar, and extract and whip until soft peaks form.
  • You can assemble these just by cutting the shortcake in half and placing strawberries on top with some whipped cream, but I love to make these in mason jars heres how to do that:
  • Cut a shortcake in half and place the bottom in a half pint mason jar.
  • Place a couple spoonfuls of strawberries on top, followed by some whipped cream
  • Place the top half of the shortcake upside down in the jar, and repeat the layering process.
  • Top with slivered almonds and a strawberry slice, if desired.
